Ingredients

  • 15 Chocolate Sandwich Cookies (I used Newman O’s), GF peeps can use GF Sandwich Cookies
  • 2 T. Coconut Oil
  • 1 package extra firm silken tofu
  • 2/3 C. agave
  • 1/4 t. sea salt
  • 1 T. vanilla
  • 1 t. instant coffee granules (I used a coffee substitute)
  • 1/2 C. cocoa powder
  • 1 cup full fat coconut milk (from a can)
  • 1 C. vegan dark chocolate chips, melted

In a food processor, pulse the chocolate sandwich cookies til finely crumbled, add the coconut oil and pulse again until combined. Press into a spring-form pan or pie dish. Add the tofu, agave, sea salt, vanilla, coffee granules, cocoa powder and coconut milk to the food processor. Process until completely combined and smooth. Melt your chocolate chips if you haven’t all ready. Scrape them into the tofu mixture. Pulse again until chocolate is completely incorporated. Freeze for 30 minutes before serving to firm. Leftovers can be stored in the refrigerator and will stay nicely set.
