Comfortingly Mouthwatering Vegan Eggplant Parmesan Subs

Turn to this handheld scrumptious meal when looking for an all-star, easy-to-follow sandwich recipe. Cheese sauce on the bottom half, few basil leaves, eggplant patties on top, marinara sauce and more cheese sauce to the top, what more could you ask for? These are soft, lightly browned, and completely cooked through.

To create this delicious vegan sandwich, all you need is eggplant, multigrain bread crumbs, dried basil and oregano, and almond milk for the parmesan patties.

This can make 4 sandwiches and they are big enough you’ll be full and content.

tip: to save time, substitute homemade marinara sauce for a pasta sauce of your choice. You can also omit the bread and just eat these as eggplant stacks with the marinara sauce, cheese sauce, and fresh basil leaves layered between eggplant patties.

  • 2-3 tsp sea salt
  • 1 C multigrain bread crumbs (can sub gluten-free)
  • 1/4 C GO Veggie! parmesan grated topping (optional)
  • 1/2 tsp dried basil
  • 1/2 tsp dried oregano
  • 1/4 tsp sea salt
  • 1/4 tsp ground pepper
  • 1/2 C almond milk (can sub soy milk)
  • 1/2 C all-purpose flour (can sub gluten-free)
  • 1 tsp vegetable oil (can use olive oil)
  • 1 to 1 1/2 C vegetable oil (for deep frying patties – DO NOT use olive oil)
