Utterly Delightful Vegan Berry Crumble Cake

It is funny how the more I am trying to tame my sweet tooth, the more I am coming across utterly irresistible vegan dessert recipes. This vegan cake with crumbles is sheer tastebud delight itself, and it’s so easy to put together, you can use it for a breakfast cake, dessert, or afternoon coffee snack.

It’s still a lot healthier than the regular dairy-loaded cakes and desserts and it’s sure to satisfy a craving in the most crumbly, melts-in-your-mouth way.Just try it!

Ingredients

  • 110g wheat flour
  • 50g ground almonds
  • 3 tbsp cornstarch
  • 1/2 tsp natron
  • 1 tsp baking powder
  • 60g raw cane sugar
  • 1/2 tsp ground vanilla
  • pinch of salt
  • 125 ml soy milk
  • 2 tsp lemon jucie
  • 60 ml neutral oil
  • 300g berries (If you use fried berries, take them out of the freezer right before using them)

For the crumbles:

  • 175g wheat flour
  • 60g raw cane sugar
  • vanilla/cinnamon/cardamom….
  • 90g margarine

Preparation

For the dough, add the lemon juice to the soy milk and let
it sit while you prepare the dough. Mix all the dry ingredients together. Then
add the oil to the milk and whisk the liquid until it condenses a bit. Mix the
liquid under the dry ingredients until it is well combined. Spread it evenly on
an oiled pan.

Spread the berries on the dough and heat the oven to 200°C.

For the crumbles you mix the flour, the sugar, the spices
and the margarine together and knead it with your hands, Sprinkle on top of the
berries.

Bake for about 40 to 45 minutes.
