I don’t know if you miss cheese or not, but for a long time I lived with the illusion that I didn’t. Until I came across this new health food store nearby, which had stocked up on variously flavored vegan herb cheeses. They were quite pricey, of course, but looked mouthwateringly delicious! I picked one, opened it as I was walking and literally ate it in one bite!

I can’t stop thinking of vegan cheese since then, and considering I have enough agar agar to make a ton of vegan cheese at home, I decided I need to get back to experimenting with vegan cheeses. So, here is this tantalizing vegan cheese recipe!

Ingredients:

  • 1 1/2 cup water
  • 5 tbsp agar flakes
  • 1/2 cup raw cashew pieces
  • 1/4 cup nutritional yeast flakes
  • 3 tbsp fresh lemon juice
  • 2 tbsp tahini
  • 1 tbsp onion granules
  • 2 tsp Dijon mustard
  • 1/4 tsp salt
  • 1/2 tsp garlic granules
  • 1/2 tsp mustard powder 1/4 ground dill seed

Preparation

Place the water and agar flakes in a small saucepan and bring to a boil. Reduce the heat and simmer for 5 minutes, stirring often. Place in a blender with the remaining ingredients and process until completely smooth.

Pour immediately into a lightly oiled 3 cup rectangular mold, loaf pan or other small rectangular container and cool. Cover and chill for several hours or overnight. To serve, turn out of the mold and slice. Store leftovers covered in the refrigerator.
