Sweetly Delightful Sweet Corn Pudding
¼ cup vegetable oil
¼ cup masa harina
1/2-1 cup coconut sugar (or 1/3 cup white sugar if you’re OK with it)
2 cups frozen corn, thawed
½ cup cornmeal
½ cup water
1 teaspoon baking powder/soda bikarbonate
½ teaspoon salt
¼ cup coconut or soy milk
Preheat oven to 350oF.
In a medium bowl mix oil, masa, and sugar.
Blend half of the thawed corn with cornmeal and water until smooth; fold into masa mixture.
Add remaining corn, baking powder, salt, and dairy-free milk. Pour into a greased baking dish.
