Spinach and Pepper Potato Bowls

For the Bowls:

  • 4 medium-sized potatoes
  • 2 tablespoons olive oil
  • 1 small onion, grated
  • Salt, pepper, and paprika to taste
  • Dill, to taste

For the Filling:

  • 2 handfuls of spinach, chopped
  • 1 tablespoon olive oil
  • 1 small onion, grated
  • 1 to 2 cloves of garlic, chopped
  • 1 hot pepper, sliced
  • 1 small tomato, grated
  • Salt and paprika to taste

To Make the Bowls:

Boil potatoes in salt water, peel, and mash with a fork.

In a pan, fry the onion for a few minutes. Add the crushed potatoes, season, and cool. Finally, mix the dill and make small bowls from the potato mix. If the bowls do not form well, cool the mixture in the freezer for 30 to 45 minutes and, if necessary, moisten hands with oil or water.

To Make the Filling:

Cook the spinach in a saucepan with a little water until it decays. Pour the whole thing into a sieve and drain excess water.

Fry the onions in oil. Add the garlic and continue for a minute or two. Add spinach and grated tomato to pan and fry for a few minutes. Finally, add the peppers and cook until ready. Fill the potatoes with the mixture.
