Everyone needs a go-to vegan meatball recipe that’s just fantastic yet quick and easy to make – like this one!
Fake meatball recipes are one of my favorite things to put together, and I’m constantly on the lookout for new flavors and ideas, because they are so awesome for lunch, dinner, even breakfast, and perfectly go in combination with a huge bowl of salad or a hearty warming soup.
1 1/3 cups Oats
½ cups olive oil
½ cups raw peeled sunflower seeds
½ to ¾ cups ground walnuts
Himalayan salt to taste
2 teaspoons of each:
Dried parsley flakes
Place the oats in a bowl and pour boiling water that covers them by 2-3 fingers. Set aside, so that they absorb the water and cool down. Once this happens, take the oats and squeeze the water out of them as you try not to leave them too dry. Add the salt, sunflower seeds, walnuts, salt, and spices, and mix well by hand. Set aside for 15-20 mins, so that the mixture can absorb the flavors of the spices. Form the meatballs and place on a tray covered with baking paper. Bake on moderate heat for about 10 mins – make sure not to overbake them, as they will become dry, and you surely want them to be more juicy!
