Ingredients

For the Blueberry Sauce:

  • 3 cups fresh blueberries
  • 3 tablespoons coconut blossom sugar
  • 1/3 cup freshly squeezed orange juice

For the Mustard Sauce:

  • 3 tablespoons yellow mustard
  • 4 tablespoons maple syrup
  • A pinch of curry powder (optional)

For the Cheesy Sauce:

  • 1 15.25-ounce can corn
  • 4 tablespoons nutritional yeast
  • 5 garlic cloves
  • Salt and pepper, to taste

For the Sandwich:

  • Blueberry sauce
  • Mustard sauce
  • Cheesy sauce
  • 12 slices of bread

Preparation

To Make the Blueberry Sauce:

Put all the ingredients in a small sauce pan and heat the mix until it starts to bubble. Let it simmer for 5-10 minutes, but do not overcook is. Set the sauce aside.

To Make the Mustard Sauce:

Combine the yellow mustard and the maple syrup in a small bowl. Add a pinch of curry powder if you like and whisk together.

To Make the Cheese Sauce:

Combine corn, garlic, nutritional yeast, salt, and pepper to taste in the bowl of a blender or food processor. Process until the mixture is well combined. Don’t over-process or it will end up too smooth.

To Make the Sandwich:

Heat a grilling pan, take your bread, and assemble the sandwich. First blueberry sauce, then vegan cheese, and finally, mustard sauce. Once the pan is hot, grill the sandwiches until crunchy and hot. This will take around 6-8 minutes. Depending on your grilling pan, results may vary.
