Easy Vegan Chocolate Chip Cherry Cookies

These Vegan Chocolate Chip Cherry Cookies are so easy to make and taste like chocolate and cherry sweet-ness!
INGREDIENTS
Wet Ingredients:
- 1/2 cup vegan butter melted (I use Earth Balance in the red tub)
- 1/2 cup vegan cane sugar
- 1/4 cup packed brown sugar
- 1 tsp vanilla
- 1 flax egg (1 tbsp ground flax and 3 tbsp water)
Dry:
- 1 3/4 cup unbleached all purpose flour
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp cornstarch
- Pinch of sea salt
Mix in:
- 1/2 cup vegan chocolate chips (I used Enjoy life chocolate chips)
- 1/2 cup maraschino cherries roughly chopped
INSTRUCTIONS
Pre-heat the oven at 360 and spray with non-stick spray or line a cookie sheet
Make your flax egg first and set aside, grind up your 1 tbsp of flax seeds and place in a bowl with 3 tbsp water
In a large mixing bowl add your butter first and microwave until melted, then add your sugar, brown sugar, vanilla, and your flax egg (wait until it’s ready, should take 3-5 minutes, it will look thick and jelly like)
Add all your dry ingredients, flour, baking powder, baking soda, salt, corn starch, and mix everything really well

Fold in your chocolate chips and chopped up cherries
Form large cookie shapes about the size of your palm (actual cookie shapes, if you form balls they are still delicious but they are much smaller and round)
Bake for 15-16 minutes
Makes 12 large cookies
Or 18 smaller cookies (if you roll them smaller)
