As November is here, I feel deeply grateful for everything that life has brought me this past year.

It has been a rollercoaster of new experiences, emotions, people, and self-growth that has enhanced my life journey in so many ways! It has also been a great year for the impact I was able to make for the animals, as not only was I blessed with good health, inspiration and the right state of mind to work on this blog, but I was also able to make a difference in my local community and help quite a few people take on the road of veganism.

My hopes are set high for the upcoming New Year, and what best way to celebrate gratitude, but with something sweet?

I must confess I have a very strong sweet tooth, so even just pictures of desserts make me drool! I love to dig unique recipes that you won’t find in every Thanksgiving round-up out there, so I know you’ll enjoy these suggestions. I usually find it hard to make a choice, so good luck with picking just one or two options from the suggestions I have for you today!

Drool-Worthy Molten Cakes

Ingredients

For the hazelnut and date sauce

½ cups/100g dates

1 ½ tbsp. / 20g hazelnuts

125ml hazelnut milk

For the chocolate and banana cakes

½ cups/100g sunflower spread, plus extra for greasing

½ cups/100g dark chocolate, suitable for vegans, broken into pieces

1 cup / 150g caster sugar

2 medium bananas, broken into pieces

½ tsp vanilla extract

1/3 cups/ 75g self-raising flour

Method

Soak the dates and hazelnuts in boiling water for 30 minutes. Drain, tip into a food processor, add the hazelnut milk and whizz until smooth. Pass through a sieve into a bowl and set aside.

Meanwhile, preheat the oven to 200°C/gas mark 6. Grease four 200ml ramekins with the sunflower spread and line their bases with baking paper.

Melt the chocolate and the spread in a small saucepan over a low heat, then pour into a food processor.

Add the caster sugar, bananas, vanilla extract and self-raising flour to the food processor and whizz well to combine. Divide the mixture between the four ramekins and bake in the oven for 15 minutes.

Run a small knife around the edges of each ramekin, then tip each one on to a small plate. Pour over the sauce and serve immediately.
