Cook garlic and onion in oil on medium heat until they become golden.
Add ginger, peas and carrots, bell pepper, veggies, and a pinch of salt. Mix and cook for 3 to 4 minutes.
Add the shredded cauliflower and broccoli, sauces, black pepper, and salt, and mix well. Cook for 5 minutes.
Fluff well, cover the mixture and let it sit to steam for 2 minutes.
Try it to see if it needs more salt or another spice. Then fluff again and serve.
Add soy sauce or Asian chile sauce and scallions for garnish when serving.
You can serve it as it is or with baked tofu.
3. Fat Bombs
1/2 cup nut butter or coconut butter
1/4 cup cocoa or cacao powder
1/4 cup melted coconut oil
stevia as you wish or 1 tbsp liquid sweetener
1/8 tsp salt, optional
Mix all ingredients together until they are smooth. If the mixture is too dry, add coconut oil as much as needed.
Pour the mixture into ice cube trays, candy moulds or a small container. Freeze it.
Keep in mind that you should store these delicious fat bombs in a freezer instead of the fridge because the coconut oil softens if it’s warm.
4. Chocolate Avocado Smoothie
1/2 ripe avocado
1 1/2 tablespoon unsweetened cocoa powder
1 cup unsweetened vanilla almond milk
2-3 tablespoon crystal sweetener or 8-10 stevia drops
2/3 cup ice cubes
1 teaspoon hemp powder, optional
Put all ingredients into a blender and blend for 45-60 seconds on high speed.
Stop blending and try the smoothie. If needed, add 1 tbsp of sweetener and adjust the texture.
Add 2-3 ice cubes if you want to make your smoothie thicker.
Blend until it’s really smooth.
5. Superfood Breakfast Bowl
2 tbsp chia seeds
1/2 tbsp hemp seeds
2 tbsp unsweetened coconut flakes
1 cup almond milk or other non-dairy milk
1/4 cup protein powder
1/2 cup mixed berries (blueberries and/or strawberries)
1/2 cup chopped pecans
1/2 cup chopped walnuts
Put chia seeds, hemp seeds, coconut flakes, almond (or another non-dairy) milk, and the protein powder into a container or a jar.
Shake well so that all ingredients are mixed and the protein powder is fully incorporated in the mixture.
Put the mixture in the fridge over the night.
The next morning, add the mixed berries, chopped pecans and walnuts, and enjoy your breakfast.
