5 Easy Vegan Keto Recipes To Get You Started

1.   Zucchini Noodles

  • 1 zucchini
  • 1 avocado
  • 12 sliced cherry tomatoes
  • 4 tbsp pine nuts
  • 1 1/4 cup basil
  • 2 tbsp lemon juice
  • 1/3 cup water

Instructions

  1. Make zucchini noodles by using a spiralizer or a peeler.
  2. Blend the other ingredients, except the cherry tomatoes, to make the avocado sauce.
  3. Put the zucchini noodles in a bowl, add the avocado sauce, and then add the cherry tomatoes.

 

2.   Vegan Cauliflower Fried Rice (1 Pot)

Ingredients

  • 5-3 cups shredded cauliflower
  • 1 cup shredded broccoli
  • 1/2 cup chopped bell pepper
  • 11 cup peas and carrots
  • 1/4 cup chopped onion or shallots
  • 4 cloves of finely chopped garlic
  • 1 tbsp minced ginger
  • 1 tbsp + 1 tsp soy sauce
  • 1 to 2 tsp Asian chile sauce
  • 1/2 to 1 tsp toasted sesame oil
  • 1/4 tsp salt
  • a generous dash of black pepper
  • scallions for garnish
  • 1/2 tsp oil optional

Instructions


  1. Cook garlic and onion in oil on medium heat until they become golden.
  2. Add ginger, peas and carrots, bell pepper, veggies, and a pinch of salt. Mix and cook for 3 to 4 minutes.
  3. Add the shredded cauliflower and broccoli, sauces, black pepper, and salt, and mix well. Cook for 5 minutes.
  4. Fluff well, cover the mixture and let it sit to steam for 2 minutes.
  5. Try it to see if it needs more salt or another spice. Then fluff again and serve.
  6. Add soy sauce or Asian chile sauce and scallions for garnish when serving.
  7. You can serve it as it is or with baked tofu.

3.   Fat Bombs

Ingredients

  • 1/2 cup nut butter or coconut butter
  • 1/4 cup cocoa or cacao powder
  • 1/4 cup melted coconut oil
  • stevia as you wish or 1 tbsp liquid sweetener
  • 1/8 tsp salt, optional

Instructions


  1. Mix all ingredients together until they are smooth. If the mixture is too dry, add coconut oil as much as needed.
  2. Pour the mixture into ice cube trays, candy moulds or a small container. Freeze it.
  3. Keep in mind that you should store these delicious fat bombs in a freezer instead of the fridge because the coconut oil softens if it’s warm.

4.   Chocolate Avocado Smoothie


Ingredients

  • 1/2 ripe avocado
  • 1 1/2 tablespoon unsweetened cocoa powder
  • 1 cup unsweetened vanilla almond milk
  • 2-3 tablespoon crystal sweetener or 8-10 stevia drops
  • 2/3 cup ice cubes
  • 1 teaspoon hemp powder, optional

Instructions

  1. Put all ingredients into a blender and blend for 45-60 seconds on high speed.
  2. Stop blending and try the smoothie. If needed, add 1 tbsp of sweetener and adjust the texture.
  3. Add 2-3 ice cubes if you want to make your smoothie thicker.
  4. Blend until it’s really smooth.

5.    Superfood Breakfast Bowl

Ingredients

  • 2 tbsp chia seeds
  • 1/2 tbsp hemp seeds
  • 2 tbsp unsweetened coconut flakes
  • 1 cup almond milk or other non-dairy milk
  • 1/4 cup protein powder
  • 1/2 cup mixed berries (blueberries and/or strawberries)
  • 1/2 cup chopped pecans
  • 1/2 cup chopped walnuts

Instructions

  1. Put chia seeds, hemp seeds, coconut flakes, almond (or another non-dairy) milk, and the protein powder into a container or a jar.
  2. Shake well so that all ingredients are mixed and the protein powder is fully incorporated in the mixture.
