Comfortingly Delicious Vegan Spinach Fillo Dough Cake (Banitsa)

I’ll let you into a secret.

There are some amazingly delish traditional Eastern European dishes you may have never heard about yet that will absolutely blow your tastebuds away.

Not sure if you’ve ever tasted ‘Banitsa’ – originally, the recipe includes cheese and eggs, but this one here is a vegan version that may be even better!

One bite into this succulent meal, and you’ll be hooked, looking for other traditional Eastern European dishes. Look no further, as here’s another one, and I plan to be posting more of these in the recipe section of the site, so stay updated!

Onto the recipe….

You’ll need:

  • 1 pack of Fillo Dough Sheets
  • 2.5 cups spinach
  • 1 cup bulgur
  • 2-3 onions
  • ¾ cups olive oil
  • Salt to taste

Preparation instructions

Pour 1 cup of hot water onto the bulgur and set aside. Chop the onion and stew with some oil. Then add the spinach and cook for another 3-5 mins. Mix the cooked veggies with the bulgur, and season with salt to taste. Put some oil on a non-stick baking tray, and cover the bottom of the tray with two fillo dough sheets. Put some more olive oil onto the dough sheets, then add some of the veggie-bulgur mixture, spreading it evenly onto the sheets. Then add two more of the sheets, adding olive oil and spreading some more of the mixture. Do this until you have added all dough sheets, finishing with 2 sheets, sprinkled with olive oil. Bake over 370 F (190 C) for about 40-50 mins. Sprinkle with some water and cover with a towel as soon as you take the banitsa out of the oven. Let it sit for 30 mins.
