Recently I have started buying various spice blends for meatballs or for meat, and I’ve been putting them on all sorts of meals, including potatoes. The results are simply amazing! I encourage you to try it for yourself with this simple, but absolutely delightful recipe.
The combination of lightly browned meatballs and a sauce that’s both delicate and intense if very, very good! Add some olives and herbs for luxury and you have a delicious lunch or dinner!
Scrumptious Vegan Bean ‘Meatballs’ With A Very Special Sauce
This makes about 8 bean balls
1 cup cooked beans
1 medium sized onion
2 tsp meatball spice blend
Salt, pepper to taste
1 tsp olive oil
For the sauce:
2 tsp tahini
2 tsp mustard
1 tsp agave syrup
2 tsp olive oil
salt, pepper to taste
Clean the potatoes and carrots, cut and cook together in salted water for 15 minutes. Drain and mix with the cooked beans.Crush everything with a fork, then add salt, pepper, and the meatball spice blend to the mixture plus olive oil (optional). Mix well and form the balls.
Cook the veggie balls in a heated non-stick pan for 2-3 minutes on each side – adding oil to the pan is optional again.
Mix the ingredients for the sauce and use as a topping when serving this delicious meal.
Combine with a light salad of tomatoes, olives and basil.
