Spring is in the air and what I tend to feel this time of the year is that my body craves lighter meals.
As the warm weather sings in our hearts it’s not only a new beginning, but also the end of another season of winter snacks. Now is the perfect time to rev up the healthiness of your meals, and if you haven’t done so yet – to actually try vegan!
This quick vegan quinoa recipe is as yummy as it is colorful, and it is an awesome meal to set you into a spring mood. Plus, who wants to spend hours in the kitchen when the weather invites us for more exciting outdoor adventures?
1-Minute Vegan Quinoa ‘Splash of Deliciousness’
1 cup quinoa
2 cups water
½ cup frozen corn
½ cup frozen peas
½ cup red bell peppers
½ cup red beans
A pinch of salt
A pinch of black pepper
1 tablespoon tahini
A handful of cashews for serving
Rinse the quinoa very well under running water. Place the quinoa over medium heat with 2 cups of water and let it cook until it fully absorbs the water (about 15 minutes). Shortly before removing the quinoa from the heat, add the vegetables, salt and black pepper, and stir.
Remove from the heat, top up with the tahini, and serve with the cashews.
* This quinoa recipe is delicious even cold.
