This plate of Vegan Meat and Potato Stew with Peas is a giant mixture of flavor texture and healthy goodness all mixed together…  Seitan, carrots, potatoes, and peas are served in a thick, rich gravy. It’s so hearty, you might just have to eat it with a fork. It is perfect for a cold night in, with big chunks of veggies, and creamy gravy.

Here’s what you’ll need: 

FOR THE STEW:

  • 1 8-ounce package of seitan, cut into cubes
  • 3 large carrots, cut into small cubes
  • 10-12 small new potatoes, cut in half
  • 2-3 cups of frozen peas
  • 1/2 onion thinly sliced
  • Olive oil
  • Barbecue seasoning

FOR THE GRAVY:

  • 1/4 cup white or whole wheat flour
  • 2 cups vegetable broth
  • 2 tablespoons nutritional yeast
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 tablespoons soy sauce
  • 1/2 teaspoon black pepper
